Sushi Inspired Salad

Whose in the mood for a fresh tasting sushi inspired salad?

This easy to make salad featured organic edamame beans, brown rice (yay complex carbs), sun-dried tomato, and a sesame ginger dressing with miso.  If you’re new to the miso train- jump on board!  It is a fermented soybean paste- you might recognize the flavour from miso soup.  Miso is a probiotic, which means it contains healthy bacteria to populate our gut- improving digestion, mood, and brain function.  Miso makes for delicious salad dressings and stir fry sauces.

Sushi Salad

A protein packed salad with edamame, brown rice, and a sesame ginger dressing.

For the Salad:

  • 1 cup wild or brown rice cooked and cooled
  • 1 cucumber diced small
  • 6 whole sundried tomatoes diced small
  • ¼ cup red onion
  • 500 gram bag organic edamame cooked and cooled

For the Dressing:

  • ¼ cup sesame seed oil
  • 2 tbsp rice vinegar
  • 1 tbsp tamari
  • ¼ tsp ground ginger
  • 1 tsp miso


  1. Mix all salad ingredients together in a large bowl. 

  2. Whisk all dressing ingredients together in a small bowl. 

  3. Toss dressing onto the salad and enjoy!
