Purple Power Salad

Perhaps this should be called a “red” salad with the red beets and cabbage, but once the dressing is mixed in and the salad is tossed, the beets stain everything to give this salad a purple glow.  So Purple Power Salad it is!

This salad was really well received in my house.  If you aren’t a huge fan of raw beets in salad, the trick is to spiralize them so you aren’t biting into huge chunks of raw root veggies.  This recipe also includes a spiralized zucchini, because spiralized things are simply more fun!

I hope you give this recipe a try this summer.  Not only does it taste great, you receive all the benefits of beets, plus the protein punch from broccoli and sesame seeds.  Not to mention, foods from the brassica family (cabbage, broccoli, brussels sprouts, etc.) contain phytonutrients which stimulate phase I and phase II in liver detoxification.  For example, I-3-C (indole-3-carbinol), a phytonutrient which stimulate detoxification in the gut and the liver, and has also been shown to have powerful anti-cancer properties.  So dig in and enjoy the taste, colors, and all the nutritional benefits of this salad!

Purple Power Salad

A wonderfully detoxifying raw salad.  

Servings 4 people (as a side)

  • 2 cups mixed greens
  • 1 zucchini spiralized
  • 1 head broccoli chopped small
  • 2 small beets (or 1 large) spiralized
  • 1 tbsp sesame seeds


  • Shy 1/4 cup apple cider vinegar
  • 1/3 cup sesame oil
  • 2 tbsp tahini
  • 1/2 tsp miso
  • 1 clove garlic
  • 1 cm piece of ginger
  • 1 tsp honey
  • Pinch Salt & pepper (if you like)
  • Water (as needed, to thin)


  1. Place your mixed greens in a bowl.  Add the chopped broccoli and the spiralled zucchini and beets. 

  2. For the dressing, place all ingredients (except water) in a blender and combine.  If the dressing is too thick for your liking, add water a tablespoon at a time.  

  3. Toss the salad with the dressing, add the sesame seeds, and serve!
