Easy Breakfast Bars

As a nutritionist, one of the most common things I hear is, “I don’t have time for breakfast.”

While I urge all of us to find extra time in the morning, in a calm “rest and digest” atmosphere, to eat breakfast… let’s be honest- this isn’t always an option!  In fact, it usually isn’t.  We live busy lives in a busy world.  So what do we do?  Well, we do our best.

Which is why I LOVE make-ahead, easy to grab breakfast options, such as these breakfast bars from Joy McCarthy’s latest book, Joyous Detox.  Joy is based out of Toronto, and is one of my favorite nutritionists.  I find her recipes delicious, nutrient dense, and fool proof!

The great thing about these breakfast bars, is that you don’t even need to bake them, as they are totally raw!  So easy.  When I recreated these bars, I used a mix of sunflower seed butter and almond butter.  For the protein, I used Bulletproof Upgraded Whey Protein, which is unflavored.  Thank you Joy, for sharing this recipe with us!

No-Bake Superfood Breakfast Bars

Quick & easy breakfast bars from Joy McCarthy.

  • 1 cup old-fashioned rolled oats
  • ¾ cup dried cranberries
  • ¾ cup unsweetened shredded coconut (unsulphured)
  • ½ cup raw sunflower seeds
  • ¼ cup chia seeds
  • 1 tbsp cinnamon
  • 1 tsp pure vanilla extract
  • ½ cup almond butter or sunflower seed butter for a nut-free option
  • 2 bananas mashed
  • 1 organic orange, zest only
  • ½ cup vanilla, chocolate, or natural-flavour protein powder
  • ¼ cup coconut oil melted


  1. Combine all ingredients in a large bowl and mix well. 

  2. Press into a 9-inch (2.5 L) square pan and refrigerate for 4 hours. 

  3. Cut into squares and enjoy. Store in the fridge or freezer.
